Dai is a research fellow of the Department of Food Science and Technology, Faculty of Science, National University of Singapore (NUS), as well as the CTO of Probicient (a NUS spin-off). She graduated with a Ph.D from the National University of Singapore. Her area of research covers development and commercialisation of probiotic beer, microencapsulation of probiotics for probiotic food and beverage, fermentation and flavour study of beer, wine and fruit wine, and investigation and analysis of global alcoholic-beverage industry. Chen has published tens of SCI articles and is a co-inventor of four patents about probiotic beverages, including the ambient-stable probiotic beer and microencapsulated probiotics in food and beverage.
