Shao Quan graduated with a Ph.D from Massey University, New Zealand, and became a faculty member at NUS in 2008, after working in the New Zealand dairy industry for over 10 years. His teaching interests includes food fermentation and flavour science. His area of research covers fermentation of alcoholic and non-alcoholic beverages, food waste biovalorization, probiotic-fermented foods and beverages. Assoc. Shao Quan has published over 200 SCI articles and is a co-inventor of over 10 patents, including the world’s first probiotic beer.

Dr Liu will be part of Probiotics session on Day 2.
