Darel is a research fellow from the Singapore Institute of Food and Biotechnology Innovation (SIFBI), A*STAR with a Ph.D. in food science and technology from the National University of Singapore. By integrating clinical nutrition with food sciences, Darel’s research goal is to address global nutrition security concerns, and the growing epidemic of diet-related non-communicable diseases through evidence-based food and dietary strategies. His current research projects investigate the effects of novel plant-based meats on cardiometabolic health, and explores the application of chrononutrition for chronic disease risk management.

Darel will be part of the Healthy Ageing / Personalisation and Future Food Innovation session on Day 3.
